With Dr. Trouo, Navarini looks at antiradical behavior as well as anti-oxidants in the coffee making system and in fact coffee can indeed provide one of them to stabilize free radicals. Navarini gives the most meaningful intent of this research is to better understand the free radical changes that may enter into coffee throughout the lifetime of roasting coffee beans.
