Luciano Navarini as chief chemist of Illycafe begged Dr Troup to cooperate in anti-oxidant content research on coffee in th. 2012 yesterday. This collaboration is an important aspect of research on the dangers of free radicals and anti-oxidants in coffee, "said Navarini. With Dr. Trouo, Navarini looks at antiradical behavior as well as anti-oxidants in the coffee making system and in fact coffee can indeed provide one of them to stabilize free radicals. Navarini gives the most meaningful intent of this research is to better understand the free radical changes that may enter into coffee throughout the lifetime of roasting coffee beans.
